illustrator gradient mesh

Hi,

I was using gradient mesh in illustrator cs4 to create photo realistic pictures. However, I don't understand why I cannot press press the alt key to change the direction of a single handle without changing the direction of the other handle when I click on an anchor point.

Also, I was surprised to find that there are 3 handles for one anchor point. Can anyone advice?
